Ingredients

1 large bunch kale (8 ounces / 225 g), stems removed and chopped

1/3 cup grated Parmesan cheese (30 g)

1/4 cup extra virgin olive oil (60 ml)

3 tablespoons fresh lemon juice (45 ml)

1 teaspoon lemon zest

1 small clove garlic, minced

1/4 teaspoon sea salt

Optional: 1/4 cup toasted nuts or seeds (35 g)
Instructions

Place chopped kale in a large bowl and sprinkle with a pinch of salt. Massage with your hands for 1 to 2 minutes until softened.

In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, salt, and black pepper.
