Description

Ingredients

Scale
  • 1 large bunch kale (8 ounces / 225 g), stems removed and chopped

  • 1/3 cup grated Parmesan cheese (30 g)

  • 1/4 cup extra virgin olive oil (60 ml)

  • 3 tablespoons fresh lemon juice (45 ml)

  • 1 teaspoon lemon zest

  • 1 small clove garlic, minced

  • 1/4 teaspoon sea salt

  • 1/4 teaspoon black pepper

  • Optional: 1/4 cup toasted nuts or seeds (35 g)


Instructions

  • Place chopped kale in a large bowl and sprinkle with a pinch of salt. Massage with your hands for 1 to 2 minutes until softened.

  • In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, salt, and black pepper.

  • Pour the dressing over the kale and toss well to coat evenly.

  • Let the salad rest for 5 minutes to allow flavors to blend.

  • Add grated Parmesan and optional toppings, then toss gently before serving.
