Description

A refreshing, creamy, and zesty pasta salad inspired by classic street corn flavors, made lighter and perfect for everyday meals.


Ingredients

Scale
  • 12 ounces (340 g) whole wheat rotini or bowtie pasta

  • 2 cups (300 g) fresh corn kernels

  • 1 cup (150 g) cherry tomatoes, halved

  • 1/2 cup (75 g) diced red bell pepper

  • 1/3 cup (50 g) diced red onion

  • 1/4 cup (15 g) chopped fresh cilantro

  • 1/4 cup (20 g) chopped fresh parsley

  • 1/2 cup (120 g) plain Greek yogurt

  • 2 tablespoons olive oil

  • 2 tablespoons fresh lime juice

  • 1 teaspoon lime zest

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon sea salt

  • 1/4 teaspoon black pepper


Instructions

  • Cook pasta in salted water until al dente. Drain and cool.

  • Grill or sauté corn until lightly charred; cool and remove kernels.

  • Combine corn, tomatoes, bell pepper, onion, cilantro, and parsley in a large bowl.

  • Whisk yogurt, olive oil, lime juice, zest, spices, salt, and pepper until smooth.

  • Add pasta and dressing to vegetables and toss well.

  • Chill for 30 minutes before serving.

Notes

  • Adjust lime juice and seasoning to taste before serving.

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.

  • Stir well before serving, adding a splash of olive oil if needed.
