A refreshing, creamy, and zesty pasta salad inspired by classic street corn flavors, made lighter and perfect for everyday meals.
Ingredients

12 ounces (340 g) whole wheat rotini or bowtie pasta

2 cups (300 g) fresh corn kernels

1 cup (150 g) cherry tomatoes, halved

1/2 cup (75 g) diced red bell pepper

1/3 cup (50 g) diced red onion

1/4 cup (15 g) chopped fresh cilantro

1/4 cup (20 g) chopped fresh parsley

1/2 cup (120 g) plain Greek yogurt

2 tablespoons olive oil

2 tablespoons fresh lime juice

1 teaspoon lime zest

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

1/2 teaspoon garlic powder

1/2 teaspoon sea salt

1/4 teaspoon black pepper
Instructions

Cook pasta in salted water until al dente. Drain and cool.

Grill or sauté corn until lightly charred; cool and remove kernels.

Combine corn, tomatoes, bell pepper, onion, cilantro, and parsley in a large bowl.

Whisk yogurt, olive oil, lime juice, zest, spices, salt, and pepper until smooth.

Add pasta and dressing to vegetables and toss well.

Chill for 30 minutes before serving.
