A crisp, refreshing salad featuring sweet carrots, crunchy apples, and a tangy citrus-honey dressing that adds a vibrant burst of flavor to any meal.
Ingredients
4 medium carrots (about 2 cups or 240 grams), peeled and grated
2 medium crisp apples (about 2 cups or 300 grams), julienned
2 tablespoons (30 ml) freshly squeezed lemon juice
1 tablespoon (15 ml) honey
1 tablespoon (15 ml) extra virgin olive oil
1/4 teaspoon (1.5 grams) fine sea salt
1/8 teaspoon (0.5 gram) freshly ground black pepper
2 tablespoons (8 grams) chopped fresh parsley (optional)
1/4 cup (30 grams) chopped walnuts or pecans (optional)
2 tablespoons (20 grams) raisins or dried cranberries (optional)
Instructions
Peel and grate the carrots into a large mixing bowl.
Core and julienne the apples, then toss them with 1 tablespoon (15 ml) lemon juice to prevent browning.
In a small bowl, whisk together the remaining lemon juice, honey, olive oil, sea salt, and black pepper.
Pour the dressing over the carrots and apples, tossing until evenly coated.
Fold in parsley, nuts, and dried fruit if using.
Refrigerate for 20–30 minutes before serving for best flavor.
Notes
For best texture, serve within 24 hours. Adjust sweetness by increasing or decreasing honey. Add nuts just before serving to maintain crunch. Substitute maple syrup for honey to make the salad vegan.
