A refreshing and vibrant pasta salad inspired by classic Caprese flavors, perfect for light meals, warm days, and make-ahead lunches.
Ingredients

Pasta – 12 oz (340 g) rotini or fusilli

Cherry tomatoes – 2 cups (300 g), halved

Fresh mozzarella pearls – 8 oz (225 g)

Fresh basil leaves – 1 cup (30 g), torn

Extra virgin olive oil – 1/4 cup (60 ml)

Fresh lemon juice – 3 tablespoons (45 ml)

Lemon zest – 1 teaspoon

Garlic – 1 small clove, minced

Dijon mustard – 1 teaspoon

Honey – 1 teaspoon

Salt – 3/4 teaspoon

Black pepper – 1/2 teaspoon

Red pepper flakes – 1/4 teaspoon (optional)
Instructions

Cook pasta in salted boiling water until al dente. Drain, rinse briefly with cool water, and let dry.

Whisk olive oil, lemon juice, lemon zest, Dijon mustard, honey, garlic, salt, pepper, and red pepper flakes in a small bowl.

Combine pasta, tomatoes, and mozzarella in a large bowl.

Pour dressing over the mixture and toss gently.

Add basil and toss lightly.

Chill for 20 minutes before serving.

For best flavor, use fresh basil added just before serving.
