Description

A refreshing and vibrant pasta salad inspired by classic Caprese flavors, perfect for light meals, warm days, and make-ahead lunches.


Ingredients

  • Pasta – 12 oz (340 g) rotini or fusilli

  • Cherry tomatoes – 2 cups (300 g), halved

  • Fresh mozzarella pearls – 8 oz (225 g)

  • Fresh basil leaves – 1 cup (30 g), torn

  • Extra virgin olive oil – 1/4 cup (60 ml)

  • Fresh lemon juice – 3 tablespoons (45 ml)

  • Lemon zest – 1 teaspoon

  • Garlic – 1 small clove, minced

  • Dijon mustard – 1 teaspoon

  • Honey – 1 teaspoon

  • Salt – 3/4 teaspoon

  • Black pepper – 1/2 teaspoon

  • Red pepper flakes – 1/4 teaspoon (optional)


Instructions

  • Cook pasta in salted boiling water until al dente. Drain, rinse briefly with cool water, and let dry.

  • Whisk olive oil, lemon juice, lemon zest, Dijon mustard, honey, garlic, salt, pepper, and red pepper flakes in a small bowl.

  • Combine pasta, tomatoes, and mozzarella in a large bowl.

  • Pour dressing over the mixture and toss gently.

  • Add basil and toss lightly.

  • Chill for 20 minutes before serving.

Notes

  • For best flavor, use fresh basil added just before serving.

  • Store leftovers in an airtight container for up to 3 days.

  • Refresh with a drizzle of olive oil and lemon juice before serving if needed.
