Description
A light and refreshing salad combining crisp cucumber, juicy tomatoes, creamy mozzarella, and fresh basil.
Ingredients

1 large English cucumber (about 300 g), thinly sliced

250 g cherry tomatoes, halved

200 g fresh mozzarella, sliced or in pearls

15 g fresh basil leaves, torn

3 tablespoons extra virgin olive oil (45 ml)

1/2 teaspoon salt (2.5 g), or to taste

1/4 teaspoon freshly ground black pepper (0.5 g)
Instructions

Slice the cucumber into thin rounds or half-moons and place in a large bowl.

Add the halved cherry tomatoes to the bowl.

Gently fold in the fresh mozzarella.

Scatter torn basil leaves over the salad.

Drizzle with olive oil and season with salt and black pepper.

Toss lightly and serve immediately.
