Description
A crispy, creamy Mediterranean-inspired potato dish featuring roasted baby potatoes, garlic, herbs, and baked feta cheese. Perfect as a flavorful side for family dinners or gatherings.
Ingredients
900 g baby potatoes (about 2 lbs), halved
200 g feta cheese block (about 7 oz)
4 tablespoons olive oil (60 ml)
4 cloves garlic, minced
1 teaspoon dried oregano (5 g)
1 teaspoon dried thyme (5 g)
1 teaspoon paprika (5 g)
1 teaspoon salt (6 g)
1/2 teaspoon black pepper (2 g)
1 tablespoon lemon juice (15 ml)
2 tablespoons fresh parsley, chopped (8 g)
Optional 1/2 teaspoon red pepper flakes (2 g)
Instructions
Preheat oven to 220°C (425°F) and line a baking sheet with parchment paper.
Wash and halve the baby potatoes and place them in a large mixing bowl.
Add 3 tablespoons olive oil, garlic, oregano, thyme, paprika, salt, and black pepper. Toss to coat evenly.
Spread the potatoes in a single layer on the baking sheet.
Place the block of feta cheese in the center and drizzle with the remaining 1 tablespoon olive oil.
Bake for 30–35 minutes until potatoes are golden and crispy and feta is soft.
Remove from oven, crumble the feta, add lemon juice and parsley, and gently toss to coat.
Serve warm.
Notes
For extra crispiness, place potatoes cut-side down on the baking sheet.
Use a high-quality block of feta for the creamiest texture.
Fresh herbs like dill or basil can be added for additional flavor variations.
Add extra garlic or red pepper flakes if you prefer a stronger flavor.
