  • 2 cups cooked turkey, shredded

  • 1 cup wild rice, uncooked

  • 4 cups chicken or vegetable broth

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 1 cup mushrooms, sliced

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • 1/2 teaspoon paprika

  • Salt and pepper, to taste

  • 2 tablespoons olive oil or butter

  • 1/2 cup grated Parmesan cheese (optional)

  • 1/4 cup fresh parsley, chopped


Instructions

  • Rinse the wild rice thoroughly under cold water. In a medium saucepan, bring the chicken or vegetable broth to a boil. Add the wild rice, reduce heat to low, cover, and simmer for 40–45 minutes until the rice is tender and most of the liquid is absorbed. Drain any excess liquid if necessary.

  • While the rice is cooking, heat olive oil or butter in a large skillet over medium heat. Add onions, carrots, and celery, sautéing for 5–7 minutes until softened.

  • Stir in minced garlic and sliced mushrooms, cooking for another 3–4 minutes until fragrant and slightly browned.

  • Sprinkle in dried thyme, rosemary, paprika, salt, and pepper. Stir well to coat the vegetables evenly with the seasonings.

  • Add the shredded turkey to the skillet, mixing it with the vegetables and seasonings. Cook for 5 minutes until heated through.

  • Gently fold in the cooked wild rice, ensuring the turkey and vegetables are evenly distributed throughout the bowl.

  • Remove from heat and stir in fresh parsley and Parmesan cheese if desired. Adjust seasoning to taste. Serve warm in individual bowls.

  • Optional: Drizzle with olive oil or serve with crusty bread or a side salad for a complete meal.
