Ingredients
-
12 oz elbow macaroni (or any short pasta)
-
2 cups cooked turkey breast, shredded or cubed
-
3 tablespoons unsalted butter
-
3 tablespoons all-purpose flour
-
3 cups milk (whole or 2%)
-
1 cup heavy cream
-
2 cups shredded sharp cheddar cheese
-
1 cup shredded Monterey Jack cheese
-
½ cup grated Parmesan cheese
-
1 (1 oz) packet ranch seasoning mix
-
½ teaspoon garlic powder
-
½ teaspoon onion powder
-
Salt and black pepper, to taste
-
½ cup sour cream
-
½ cup breadcrumbs (optional, for topping)
-
2 tablespoons melted butter (for topping)
-
2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
-
Bring a large pot of salted water to a boil. Add the macaroni and cook according to the package directions until al dente. Drain and set aside.
-
In a large saucepan or deep skillet, melt 3 tablespoons of butter over medium heat. Once melted, whisk in the flour and cook for 1–2 minutes to form a roux, stirring constantly.
-
Slowly pour in the milk and heavy cream, whisking continuously to ensure a smooth texture. Continue to cook for 3–4 minutes, or until the mixture begins to thicken.
-
Stir in the ranch seasoning mix, garlic powder, onion powder, salt, and pepper. Reduce the heat to low and gradually add the cheddar, Monterey Jack, and Parmesan cheeses, stirring until fully melted and smooth.
-
Add the cooked turkey and pasta to the cheese sauce, stirring until everything is well coated. Fold in the sour cream for extra creaminess.
-
Optional: Preheat oven to 375°F (190°C). In a small bowl, mix breadcrumbs with 2 tablespoons of melted butter for a crunchy topping.
-
Transfer the mac and cheese mixture to a greased baking dish. Sprinkle the buttery breadcrumbs evenly on top. Bake for 15–20 minutes, or until golden and crisp.
-
Garnish with parsley before serving and enjoy warm.
Notes
-
Don’t overcook the pasta since it will continue cooking in the sauce.
-
Use freshly shredded cheese for the creamiest sauce.
-
Taste before adding extra salt, as ranch seasoning can be salty.
-
To reheat, add a splash of milk to keep it creamy.
-
Add broccoli or spinach for extra nutrition and color.
