12 oz penne pasta

1 lb ground turkey

2 cups mushrooms, sliced

3 cloves garlic, minced

1 small onion, finely chopped

2 tbsp olive oil

2 tbsp butter

2 cups heavy cream

1 cup grated Parmesan cheese

1/2 tsp black pepper

1/2 tsp salt

1/4 tsp nutmeg (optional)

1/4 cup chopped fresh parsley for garnish
Instructions

Bring a large pot of salted water to a boil. Cook penne pasta according to package instructions until al dente. Drain, reserving 1/2 cup of pasta water.

In a large skillet, heat 1 tbsp olive oil over medium-high heat. Add ground turkey and cook until browned, breaking it up with a spoon. Season with salt and pepper. Remove from skillet and set aside.

Add remaining olive oil and butter to the skillet. Sauté onions for 2–3 minutes until translucent. Add garlic and mushrooms; cook 5–6 minutes until mushrooms are tender.

Reduce heat to medium. Pour in heavy cream and simmer 3–4 minutes, stirring occasionally, until slightly thickened.

Gradually whisk in Parmesan cheese until smooth. Season with salt, black pepper, and nutmeg if using.

Return turkey to the skillet and stir to combine. Add cooked penne pasta, tossing to coat. Add reserved pasta water as needed to reach desired sauce consistency.

Plate the pasta and garnish with parsley and extra Parmesan if desired. Serve immediately.
