Ingredients

1 ½ pounds boneless, skinless chicken thighs or chicken breasts

1 cup pineapple chunks

¾ cup pineapple juice

½ cup packed brown sugar

⅓ cup low-sodium soy sauce

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons olive oil

1 tablespoon cornstarch

2 tablespoons water

½ teaspoon black pepper

¼ teaspoon salt

2 green onions, sliced
Instructions

Season chicken with salt and black pepper.

Heat olive oil in a skillet and sear chicken until golden on both sides. Remove and set aside.

Sauté garlic and ginger in the same skillet.

Add pineapple juice, brown sugar, and soy sauce. Simmer until sugar dissolves.

Add pineapple chunks and return chicken to the skillet. Cover and simmer until cooked through.

Stir in cornstarch slurry and cook until sauce thickens.
