Description

A sweet and savory chicken dish glazed with pineapple juice and brown sugar, perfect for weeknight dinners or casual gatherings.


Ingredients

  • 1 ½ pounds boneless, skinless chicken thighs or chicken breasts

  • 1 cup pineapple chunks

  • ¾ cup pineapple juice

  • ½ cup packed brown sugar

  • ⅓ cup low-sodium soy sauce

  • 3 cloves garlic, minced

  • 1 tablespoon fresh ginger, grated

  • 2 tablespoons olive oil

  • 1 tablespoon cornstarch

  • 2 tablespoons water

  • ½ teaspoon black pepper

  • ¼ teaspoon salt

  • 2 green onions, sliced


Instructions

  • Season chicken with salt and black pepper.

  • Heat olive oil in a skillet and sear chicken until golden on both sides. Remove and set aside.

  • Sauté garlic and ginger in the same skillet.

  • Add pineapple juice, brown sugar, and soy sauce. Simmer until sugar dissolves.

  • Add pineapple chunks and return chicken to the skillet. Cover and simmer until cooked through.

  • Stir in cornstarch slurry and cook until sauce thickens.

  • Garnish and serve warm.

Notes

This dish pairs well with rice or vegetables. Adjust the sweetness by reducing the brown sugar if desired.
