The Ultimate Saucy Chicken & Vegetable Fried Rice

A hearty, flavorful one-pan meal combining tender chicken, colorful vegetables, and savory sauce-coated rice, perfect for any occasion.


Ingredients

  • 2 cups cooked long-grain rice (400 g), preferably day-old

  • 1 lb (450 g) boneless, skinless chicken breast, diced

  • 2 tablespoons vegetable oil

  • 1 cup carrots, diced (130 g)

  • 1 cup bell peppers, diced (150 g)

  • 1 cup green peas (140 g)

  • 3 green onions, sliced (30 g)

  • 2 large eggs

  • 3 tablespoons soy sauce

  • 1 tablespoon oyster-style sauce

  • 1 teaspoon sesame oil

  • 2 cloves garlic, minced

  • 1 teaspoon fresh ginger, grated

  • 1/2 teaspoon black pepper

  • Salt to taste


Instructions

  • Heat oil in a large skillet and cook chicken until golden and fully cooked. Remove and set aside.

  • Add garlic and ginger to the pan, then stir in vegetables and cook until tender-crisp.

  • Scramble eggs in the pan, then add rice and stir well.

  • Return chicken to the pan and add sauces and sesame oil. Stir until evenly coated and heated through.

  • Finish with green onions and adjust seasoning before serving.

Notes

For best texture, use cold, day-old rice and cook over medium-high heat. Adjust vegetables and seasoning to suit your taste.
