Ingredients

2 cups cooked long-grain rice (400 g), preferably day-old

1 lb (450 g) boneless, skinless chicken breast, diced

2 tablespoons vegetable oil

1 cup carrots, diced (130 g)

1 cup bell peppers, diced (150 g)

1 cup green peas (140 g)

3 green onions, sliced (30 g)

2 large eggs

3 tablespoons soy sauce

1 tablespoon oyster-style sauce

1 teaspoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/2 teaspoon black pepper

Salt to taste
Instructions

Heat oil in a large skillet and cook chicken until golden and fully cooked. Remove and set aside.

Add garlic and ginger to the pan, then stir in vegetables and cook until tender-crisp.

Scramble eggs in the pan, then add rice and stir well.

Return chicken to the pan and add sauces and sesame oil. Stir until evenly coated and heated through.
