Ingredients

1 lb (450 g) boneless, skinless chicken breasts or thighs

1 tsp garlic powder

1/2 tsp onion powder

1/4 tsp black pepper

2 cups corn kernels (300 g)

1/3 cup mayonnaise (80 g)

1/4 cup sour cream or plain Greek yogurt (60 g)

1/2 tsp chili powder

1/2 tsp smoked paprika

Juice of 1 lime (30 ml)

2 cups cooked rice (360 g)

1 cup shredded lettuce (40 g)

1/2 cup diced tomatoes (90 g)

1/3 cup crumbled cheese (40 g)

Instructions

Season the chicken with olive oil, smoked paprika, cumin, garlic powder, onion powder, salt, and black pepper.

Cook the chicken in a skillet over medium heat for 5–7 minutes per side until fully cooked. Rest and slice.

Sauté the corn in olive oil over medium-high heat until lightly charred.

Mix mayonnaise, sour cream or yogurt, chili powder, smoked paprika, salt, and lime juice. Stir in the corn.

Assemble bowls with rice, chicken, street corn mixture, lettuce, tomatoes, cheese, and cilantro.
