Ingredients

2 pounds boneless, skinless chicken breasts

1 can (15 ounces) black beans, drained and rinsed

1 can (15 ounces) corn kernels, drained

1 can (10 ounces) diced tomatoes with green chilies

1 medium onion, diced

3 garlic cloves, minced
-
2 tablespoons taco seasoning

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

½ cup chicken broth

1 tablespoon olive oil
Instructions

Grease the crock pot lightly with olive oil.

Add chicken breasts to the bottom of the slow cooker.

Sprinkle seasonings evenly over the chicken.

Add onion, garlic, beans, corn, and tomatoes.

Pour in chicken broth.

Cover and cook on low for 6–7 hours or high for 3–4 hours.

Shred chicken and stir well before serving.
