Description

A simple, slow-cooked chicken recipe packed with bold flavors and perfect for busy days or relaxed family meals.


Ingredients

  • 2 pounds boneless, skinless chicken breasts

  • 1 can (15 ounces) black beans, drained and rinsed

  • 1 can (15 ounces) corn kernels, drained

  • 1 can (10 ounces) diced tomatoes with green chilies

  • 1 medium onion, diced

  • 3 garlic cloves, minced

  • 2 tablespoons taco seasoning

  • 1 teaspoon ground cumin

  • 1 teaspoon smoked paprika

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • ½ cup chicken broth

  • 1 tablespoon olive oil


Instructions

  • Grease the crock pot lightly with olive oil.

  • Add chicken breasts to the bottom of the slow cooker.

  • Sprinkle seasonings evenly over the chicken.

  • Add onion, garlic, beans, corn, and tomatoes.

  • Pour in chicken broth.

  • Cover and cook on low for 6–7 hours or high for 3–4 hours.

  • Shred chicken and stir well before serving.

Notes

  • Adjust seasoning after shredding for best flavor.

  • Serve over rice, in tortillas, or with fresh toppings.
