  • 2 medium oranges, peeled and thinly sliced

  • 2 medium grapefruits, peeled and thinly sliced

  • 1 ripe avocado, peeled, pitted, and sliced

  • 1 cup pomegranate seeds

  • 1 small fennel bulb, thinly sliced

  • 1/4 cup thinly sliced red onion

  • 1/4 cup extra virgin olive oil

  • 2 tablespoons freshly squeezed lemon juice

  • 1 tablespoon honey or maple syrup

  • 1 teaspoon Dijon mustard

  • Salt and freshly ground black pepper, to taste

  • 2 tablespoons toasted almonds or walnuts (optional)

  • Fresh mint leaves for garnish


Instructions

  • Peel the oranges and grapefruits, removing all white pith, and thinly slice into rounds or half-moons.

  • Slice the avocado carefully and brush with a little lemon juice to prevent browning.

  • Thinly slice the fennel bulb and red onion.

  • In a small bowl, whisk together olive oil, lemon juice, honey, and Dijon mustard. Season with salt and pepper.

  • On a large platter or in a salad bowl, arrange the citrus slices, avocado, fennel, and red onion. Sprinkle with pomegranate seeds.

  • Drizzle the dressing evenly over the salad.

  • Add toasted almonds or walnuts if desired and garnish with fresh mint leaves.

  • Serve immediately for best freshness and flavor.
