Ingredients

  • 1 medium onion, finely chopped

  • 3 cloves garlic, minced

  • 1 teaspoon smoked paprika

  • 1 teaspoon ground cumin

  • ½ teaspoon chili powder

  • ¼ teaspoon cayenne pepper

  • 5 cups potatoes, peeled and diced (about 800 g / 1.75 lb)

  • 4 cups vegetable broth (960 ml)

  • 1 cup milk or plant-based milk (240 ml)

  • ½ cup heavy cream or cooking cream (120 ml)

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ cup shredded cheese (about 60 g), optional

  • 2 tablespoons chopped green onions or herbs


Instructions

  • Heat olive oil in a large pot over medium heat and sauté the onion until soft.

  • Add garlic and cook briefly until fragrant.

  • Stir in smoked paprika, cumin, chili powder, and cayenne pepper.

  • Add diced potatoes and mix well.

  • Pour in vegetable broth and bring to a boil.

  • Reduce heat and simmer until potatoes are tender.

  • Partially blend the soup to achieve a creamy texture.

  • Stir in milk, cream, salt, and black pepper.

  • Simmer for a few minutes, adjust seasoning, and serve hot.

Notes

Adjust the spice level to your preference. The soup thickens as it sits, so add extra broth or milk when reheating if needed.
