6 cups fresh winter greens (kale, spinach, or arugula)

1 large orange, peeled and segmented

1 large grapefruit, peeled and segmented

1 cup pomegranate seeds

1/4 cup thinly sliced red onion

1/4 cup toasted walnuts or pecans (optional)

2 tablespoons extra virgin olive oil

1 tablespoon honey or maple syrup

1 teaspoon Dijon mustard

1 tablespoon fresh lemon juice

Salt and freshly ground black pepper, to taste
Instructions

Wash and dry all winter greens. Tear any large leaves into bite-sized pieces and place them in a large salad bowl.

Remove the peel and pith from the orange and grapefruit. Segment the fruit by cutting between the membranes, then set aside.

Remove the seeds from the pomegranate and sprinkle them over the greens.

Thinly slice the red onion and add it to the salad bowl.

In a small bowl, whisk together olive oil, honey, Dijon mustard, lemon juice, salt, and pepper until well combined.
