Ingredients

  • 6 cups fresh winter greens (kale, spinach, or arugula)

  • 1 large orange, peeled and segmented

  • 1 large grapefruit, peeled and segmented

  • 1 cup pomegranate seeds

  • 1/4 cup thinly sliced red onion

  • 1/4 cup toasted walnuts or pecans (optional)

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon honey or maple syrup

  • 1 teaspoon Dijon mustard

  • 1 tablespoon fresh lemon juice

  • Salt and freshly ground black pepper, to taste


Instructions

  • Wash and dry all winter greens. Tear any large leaves into bite-sized pieces and place them in a large salad bowl.

  • Remove the peel and pith from the orange and grapefruit. Segment the fruit by cutting between the membranes, then set aside.

  • Remove the seeds from the pomegranate and sprinkle them over the greens.

  • Thinly slice the red onion and add it to the salad bowl.

  • In a small bowl, whisk together olive oil, honey, Dijon mustard, lemon juice, salt, and pepper until well combined.

  • Drizzle the dressing over the greens and gently toss to coat everything evenly.

  • Sprinkle toasted walnuts or pecans on top if desired.

  • Serve immediately.
