Description

A flavorful and comforting baked chicken dish made with tangy balsamic vinegar, juicy tomatoes, and melted mozzarella cheese.


Ingredients

  • 4 boneless, skinless chicken breasts (about 6 oz / 170 g each)

  • 2 tablespoons olive oil

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon Italian seasoning

  • 3 cloves garlic, minced

  • ½ cup balsamic vinegar (120 ml)

  • 1 cup cherry tomatoes, halved (150 g)

  • 8 oz mozzarella cheese, sliced or shredded (225 g)

  • Fresh basil leaves, for garnish


Instructions

  • Preheat oven to 400°F (200°C) and lightly grease a baking dish.

  • Pat chicken breasts dry and rub with olive oil. Season with salt, pepper, Italian seasoning, and garlic.

  • Arrange chicken in the baking dish and pour balsamic vinegar around and lightly over the chicken.

  • Scatter cherry tomatoes around the chicken.

  • Bake uncovered for 20–25 minutes until chicken is nearly cooked through.

  • Top each chicken breast with mozzarella cheese and return to oven for 5–7 minutes until cheese is melted.

  • Garnish with fresh basil and let rest before serving.

Notes

  • For even cooking, pound thicker chicken breasts slightly before baking.

  • Use fresh mozzarella for the creamiest texture.

  • Leftovers can be stored in the refrigerator for up to three days and reheated gently.
