A flavorful and comforting baked chicken dish made with tangy balsamic vinegar, juicy tomatoes, and melted mozzarella cheese.
Ingredients

4 boneless, skinless chicken breasts (about 6 oz / 170 g each)

2 tablespoons olive oil

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon Italian seasoning

3 cloves garlic, minced

½ cup balsamic vinegar (120 ml)

1 cup cherry tomatoes, halved (150 g)

8 oz mozzarella cheese, sliced or shredded (225 g)

Fresh basil leaves, for garnish
Instructions

Preheat oven to 400°F (200°C) and lightly grease a baking dish.

Pat chicken breasts dry and rub with olive oil. Season with salt, pepper, Italian seasoning, and garlic.

Arrange chicken in the baking dish and pour balsamic vinegar around and lightly over the chicken.

Scatter cherry tomatoes around the chicken.

Bake uncovered for 20–25 minutes until chicken is nearly cooked through.

Top each chicken breast with mozzarella cheese and return to oven for 5–7 minutes until cheese is melted.

Garnish with fresh basil and let rest before serving.
