A rich and creamy noodle dish featuring tender chicken, crisp vegetables, and a flavorful peanut sauce inspired by Thai cuisine.
Ingredients
2 boneless, skinless chicken breasts (400 g), sliced
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon black pepper
250 g rice noodles
1 cup (100 g) shredded carrots
1 red bell pepper, sliced
1 cup (100 g) shredded cabbage
2 green onions, sliced
1/4 cup (15 g) chopped cilantro
Peanut Sauce:
1/2 cup (125 g) peanut butter
2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon lime juice
1 teaspoon grated ginger
2 cloves garlic, minced
1/2 cup (120 ml) warm water
Instructions
Cook noodles according to package instructions, then drain and rinse.
Heat olive oil in a skillet and cook chicken with spices for 6–8 minutes.
Whisk together peanut sauce ingredients until smooth.
Combine noodles, chicken, and sauce in the skillet.
Add vegetables and toss until slightly softened.
Garnish and serve immediately.
Notes
Adjust sauce thickness with water as needed
Add chili flakes for spice
Best served fresh but can be reheated with added moisture
