Description

  • 2 large sweet potatoes, peeled and cut into 1-inch cubes

  • 2 tablespoons olive oil

  • 2 teaspoons fresh sage, finely chopped

Topping (optional)

  • 4 oz cream cheese, softened

  • 2 tablespoons plain Greek yogurt or sour cream

  • 1 teaspoon honey or maple syrup

  • 1 tablespoon finely chopped sage or green onion

Garnish

  • Fresh sage leaves, lightly crisped in oil (optional)

  • Sea salt flakes for finishing


Instructions

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease with olive oil.

  • In a large bowl, combine the sweet potato cubes with olive oil, salt, pepper, garlic powder, smoked paprika, and chopped sage. Toss well to coat evenly.

  • Spread the seasoned sweet potatoes in a single layer on the baking sheet. Roast for 25–30 minutes, stirring halfway through, until tender on the inside and crisp around the edges.

  • While the sweet potatoes roast, prepare the optional topping. In a small bowl, mix cream cheese, Greek yogurt, honey, and chopped sage until smooth. Adjust with salt if needed.

  • When the sweet potatoes are done, let them cool slightly. Arrange them on a platter and top each piece with a small dollop of the cream mixture using a spoon or piping bag.
