  • 6 ounces goat cheese, softened

  • 2 tablespoons honey (plus more for drizzling)

  • ¼ teaspoon ground cinnamon (optional)

  • 2 tablespoons chopped fresh herbs (thyme, rosemary, or parsley)

  • ¼ cup chopped toasted pecans or walnuts

  • ¼ cup pomegranate seeds or dried cranberries

  • Microgreens or arugula leaves (optional)

  • A pinch of flaky sea salt


Instructions

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper. Slice sweet potatoes into even ¼-inch rounds for uniform cooking.

  • Arrange the slices on the baking sheet and brush both sides with olive oil. Season lightly with salt and pepper.

  • Roast for 20–25 minutes, flipping halfway through, until golden around the edges and tender in the center. Let them cool slightly.

  • In a small bowl, mix softened goat cheese with honey and cinnamon (if using) until smooth and creamy.

  • Spread a generous layer of the honey-goat cheese mixture on each roasted sweet potato round.

  • Sprinkle each with chopped toasted nuts, fresh herbs, and pomegranate seeds or dried cranberries.

  • Drizzle with a touch of honey and finish with a pinch of flaky sea salt.

  • Garnish with microgreens or arugula leaves for added color and freshness.

  • Serve warm or at room temperature for the best flavor and texture.

Notes

For extra crispiness, roast the sweet potato slices on a wire rack instead of directly on the baking sheet. You can prepare the roasted potatoes and goat cheese mixture ahead of time—just assemble right before serving to maintain texture. Try flavor variations by swapping honey for maple syrup or using different cheeses like feta, ricotta, or cream cheese.
