Ingredients
-
4 ripe pears, cored and sliced
-
1/4 cup unsalted butter
-
1/4 cup brown sugar
-
6 cups mixed salad greens (arugula, spinach, romaine)
-
1 cup walnuts, toasted
-
1/2 cup crumbled feta cheese or goat cheese
-
1/4 teaspoon ground cinnamon
-
1/4 teaspoon freshly ground black pepper
-
1 tablespoon fresh lemon juice
-
3 tablespoons extra-virgin olive oil
-
Salt to taste
Instructions
-
In a large skillet, melt the butter over medium heat.
-
Add the brown sugar, stirring until it forms a smooth, bubbling syrup.
-
Sprinkle in the cinnamon and black pepper, mixing well.
-
Carefully add the pear slices to the skillet and cook 3–5 minutes per side until golden brown and slightly softened. Remove and set aside to cool slightly.
-
While the pears cook, toast the walnuts in a small pan over medium heat for 5–7 minutes, stirring frequently. Remove and let cool.
-
In a small bowl, whisk together the olive oil, lemon juice, and a pinch of salt to make the dressing. Adjust seasoning as needed.
-
Place the salad greens in a large bowl and drizzle with the prepared dressing, tossing gently to coat.
-
Arrange the caramelized pears on top of the greens.
-
Sprinkle toasted walnuts and crumbled cheese over the salad. Serve immediately.
Notes
-
Choose ripe but firm pears like Bosc, Anjou, or Comice to avoid mushiness during caramelization.
-
Feta, goat cheese, or blue cheese can be used depending on preference.
-
Pecans or almonds are good alternatives for walnuts.
-
Toast the nuts and make the dressing ahead to save time. Assemble just before serving for best freshness.
-
Serve with roasted chicken or grilled salmon for a light meal or as part of a holiday buffet.
