Perfect for busy mornings or weekend brunches, it’s nutritious, easy to make, and naturally sweetened with honey or maple syrup.

  • 2 cups old-fashioned rolled oats

  • 1 teaspoon baking powder

  • 1 teaspoon ground cinnamon

  • ¼ teaspoon salt

  • 2 cups milk (dairy or non-dairy)

  • 2 large eggs

  • ¼ cup pure maple syrup or honey

  • 2 tablespoons melted butter or coconut oil

  • 1 teaspoon pure vanilla extract

  • 1 ½ cups mixed berries (fresh or frozen)

  • Optional toppings: sliced almonds, chopped pecans, extra berries, honey, or yogurt


Instructions

  • Preheat oven to 375°F (190°C). Grease an 8×8-inch baking dish with butter or nonstick spray.

  • In a large bowl, mix rolled oats, baking powder, cinnamon, and salt until combined.

  • In a separate bowl, whisk together milk, eggs, maple syrup, melted butter, and vanilla extract.

  • Pour the wet ingredients into the dry mixture and stir until evenly combined.

  • Gently fold in the mixed berries, being careful not to crush them.

  • Pour the mixture into the prepared baking dish, spreading evenly. Add optional toppings if desired.

  • Bake for 35–40 minutes, or until the top is golden brown and the center is set.

  • Let cool for 10 minutes before serving. Enjoy warm with honey, yogurt, or a splash of milk.

Notes

Use rolled oats for the best texture—instant oats will make it too soft. Frozen berries work great; no need to thaw them before baking. To make it dairy-free, substitute almond, oat, or coconut milk and use coconut oil instead of butter. Store leftovers in the fridge for up to 5 days or freeze individual portions for a quick breakfast anytime.
