Description

A refreshing and nutritious salad combining sweet strawberries, tender chicken, and crisp spinach, perfect for light meals or gatherings.


Ingredients

2 cups (60 g) fresh baby spinach

1 cup (150 g) strawberries, sliced

1 large chicken breast (200 g), cooked and sliced

1/4 cup (30 g) sliced almonds

1/4 cup (40 g) red onion, sliced

1/3 cup (50 g) feta cheese

3 tablespoons (45 ml) olive oil

1 tablespoon (15 ml) lemon juice

1 tablespoon (15 ml) honey

1 teaspoon (5 g) Dijon mustard

1/4 teaspoon (1.5 g) salt

1/8 teaspoon (0.5 g) black pepper


Instructions

Season and cook the chicken in a skillet over medium heat for 5–7 minutes per side until fully cooked. Let rest and slice.

Wash and dry the spinach, then place it in a large bowl.

Add sliced strawberries, chicken, red onion, almonds, and feta cheese.

In a small bowl, whisk olive oil, lemon juice, honey, Dijon mustard, salt, and pepper.

Drizzle dressing over the salad and toss gently.

Serve immediately.

Notes

Use fresh strawberries for best flavor

Add dressing just before serving

Store components separately for meal prep

Toast nuts for extra crunch and flavor
