  • 1 cup pumpkin puree

  • ½ cup granulated sugar

  • ¼ cup brown sugar, packed

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • ¼ cup milk (or plant-based milk)

  • Optional: ½ cup chopped nuts or chocolate chips

For the topping (optional)

  • ¼ cup melted butter

  • ¼ cup sugar

  • ½ teaspoon cinnamon


Instructions

  • Preheat the oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners or lightly grease each cup.

  • In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.

  • In a large bowl, combine pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until smooth.

  • Gradually stir in milk until the mixture is creamy.

  • Fold the dry ingredients into the wet ingredients until just combined. Do not overmix. Add optional nuts or chocolate chips if desired.

  • Spoon the batter into the muffin cups, filling each about three-quarters full.

  • Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.

  • For the optional topping, brush the muffins with melted butter and sprinkle with the cinnamon-sugar mixture while still warm.

  • Allow muffins to cool in the pan for 5–10 minutes, then transfer to a wire rack. Serve warm or at room temperature.
