Ingredients
For the Filling:

2 large sweet potatoes, peeled and diced

For the Crumble Topping:

1/2 cup cold unsalted butter, cubed

1/3 cup chopped pecans or walnuts (optional)
Instructions

Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

In a large bowl, combine the diced sweet potatoes and apples. Add brown sugar, maple syrup, cinnamon, nutmeg, ginger, cloves, lemon juice, vanilla extract, and a pinch of salt. Toss gently to coat evenly.

Transfer the filling to the prepared baking dish, spreading it into an even layer.

In a medium bowl, mix rolled oats, flour, brown sugar, cinnamon, and salt. Add the cubed butter and use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs. Stir in nuts if using.

Sprinkle the crumble topping evenly over the filling, covering all areas.

Bake in the preheated oven for 40–45 minutes, or until the topping is golden brown and the filling is bubbling.
