A bold, smoky, and juicy chicken burger infused with chipotle peppers and topped with creamy lime sauce—perfect for backyard grilling and summer gatherings.
Ingredients
2 pounds ground chicken (85–90% lean)
2 chipotle peppers in adobo sauce, minced
1 tablespoon adobo sauce
3 cloves garlic, minced
1/4 cup diced red onion
1 tablespoon fresh lime juice
1 teaspoon smoked paprika
1 teaspoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 cup panko breadcrumbs
1 large egg
1/2 cup mayonnaise
1 tablespoon fresh lime juice (for sauce)
1 teaspoon honey
1/2 teaspoon smoked paprika (for sauce)
Pinch of salt
6 brioche burger buns
1 cup shredded lettuce
1 large tomato, sliced
1 ripe avocado, sliced
1/4 cup sliced red onion
6 slices cheddar or Monterey Jack cheese
1 tablespoon olive oil
Instructions
In a large bowl, gently combine ground chicken, chipotle peppers, adobo sauce, garlic, diced red onion, lime juice, smoked paprika, cumin, salt, black pepper, breadcrumbs, and egg.
Form into 6 equal patties and refrigerate for 20–30 minutes.
Preheat grill to 375–400°F and brush grates with olive oil.
Grill patties for 5–6 minutes per side until internal temperature reaches 165°F.
Add cheese during the final minute to melt.
Toast buns lightly on the grill.
Mix mayonnaise, lime juice, honey, smoked paprika, and salt to make sauce.
Assemble burgers with sauce, lettuce, patty, tomato, avocado, and red onion. Serve immediately.
Notes
Refrigerate patties before grilling for easier handling.
Use a meat thermometer to prevent overcooking.
Patties can be frozen raw for up to 2 months.
