Description

A comforting, slow-cooked chicken dish infused with fresh lemon and fragrant herbs, perfect for easy family meals.


Ingredients

  • 2 pounds (900 g) bone-in, skin-on chicken thighs or drumsticks

  • 2 tablespoons olive oil (30 ml)

  • 1 teaspoon fine sea salt (5 g)

  • ½ teaspoon ground black pepper (2 g)

  • 1 teaspoon garlic powder (3 g)

  • 1 teaspoon dried oregano (2 g)

  • 1 teaspoon dried thyme (2 g)

  • 1 teaspoon dried rosemary (2 g)

  • 2 lemons, thinly sliced

  • 3 cloves garlic, minced (about 9 g)

  • 1 cup low-sodium chicken broth (240 ml)

  • 1 tablespoon cornstarch (8 g) mixed with 2 tablespoons water (30 ml), optional


Instructions

  • Season the chicken with salt, pepper, garlic powder, oregano, thyme, and rosemary.

  • Sear the chicken in olive oil until lightly golden, then transfer to the slow cooker.

  • Add garlic and lemon slices over the chicken.

  • Pour chicken broth around the chicken.

  • Cook on low for 6 to 7 hours or high for 3 to 4 hours.

  • Optional: Thicken sauce with cornstarch slurry before serving.

Notes

  • Boneless chicken can be used with reduced cooking time.

  • Add vegetables for a complete one-pot meal.

  • Store leftovers in the refrigerator for up to four days.
