Ingredients

  • Spring mix greens – 5 ounces (about 5 packed cups)

  • Cherry tomatoes – 1 cup, halved

  • Cucumber – 1 medium (about 1 cup), thinly sliced

  • Red onion – ¼ cup, thinly sliced

  • Toasted nuts or seeds – ¼ cup

For the Dressing

  • Balsamic vinegar – 3 tablespoons

  • Honey – 1½ tablespoons

  • Extra virgin olive oil – ¼ cup

  • Dijon-style mustard – 1 teaspoon

  • Salt – ¼ teaspoon

  • Black pepper – ⅛ teaspoon


Instructions

  • Place the spring mix greens in a large bowl.

  • Add the cherry tomatoes, cucumber, and red onion.

  • In a small bowl or jar, whisk together balsamic vinegar, honey, mustard, salt, and pepper.

  • Slowly whisk in olive oil until fully combined.

  • Drizzle dressing over the salad and toss gently.

  • Top with toasted nuts or seeds and serve immediately.

Notes

For best results, dress the salad just before serving. The dressing can be made up to three days in advance and stored in the refrigerator. Adjust sweetness or acidity to taste by slightly increasing or decreasing the honey or balsamic vinegar.
