Ingredients

1 small head green cabbage, chopped (6–7 cups / 700 g)

1 medium yellow onion, diced (1 cup / 150 g)

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon paprika

1/2 teaspoon ground cumin

1/2 teaspoon dried thyme

1/4 teaspoon red pepper flakes (optional)

1/2 cup (120 ml) beef broth

1 tablespoon tomato paste

1 tablespoon soy sauce or coconut aminos
Instructions

Heat olive oil in a large pan over medium heat and cook onion until soft.

Add garlic and cook briefly until fragrant.

Add ground beef and cook until browned.

Season with spices, then stir in tomato paste and soy sauce.

Add cabbage and broth, cover, and simmer until tender.
