A light and refreshing sandwich made with crisp cucumbers and a creamy herb filling, perfect for lunches, gatherings, or afternoon snacks.


Ingredients

  • 2 large cucumbers (about 500 g), thinly sliced

  • 1 teaspoon fine salt

  • 120 g cream cheese, softened

  • 2 tablespoons plain Greek-style yogurt

  • 1 tablespoon lemon juice

  • 1 tablespoon finely chopped fresh dill

  • 1 tablespoon finely chopped fresh chives

  • ¼ teaspoon ground white pepper

  • 8 slices soft sandwich bread

  • 2 tablespoons unsalted butter, softened


Instructions

  • Sprinkle sliced cucumbers with salt and let drain for 15 minutes.

  • Rinse and pat cucumbers completely dry.

  • Mix cream cheese, yogurt, lemon juice, herbs, and pepper until smooth.

  • Fold cucumbers into the creamy mixture.

  • Butter bread slices lightly.

  • Spread cucumber salad on four slices and top with remaining bread.

  • Cut and serve.

Notes

For best results, assemble the sandwiches close to serving time. Buttering the bread helps prevent sogginess and keeps the texture fresh.
