Ingredients
-
1 cup creamy peanut butter
-
1 cup granulated sugar
-
1 large egg
-
1 teaspoon vanilla extract
-
About 24 milk chocolate kisses, unwrapped
Instructions
-
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
-
In a medium-sized mixing bowl, combine the peanut butter, sugar, egg, and vanilla extract. Stir until smooth and fully blended.
-
Using your hands or a small cookie scoop, form 1-inch balls of dough. Roll each ball in additional sugar if desired. Place the dough balls about 2 inches apart on the prepared baking sheet.
-
Bake the cookies for 8–10 minutes, or until the edges are just set.
-
Remove the cookies from the oven and immediately press a chocolate kiss into the center of each warm cookie.
-
Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
Notes
-
For a slightly crispier texture, let the cookies bake an extra minute or two.
-
Crunchy peanut butter can be used for added texture.
-
Natural peanut butter will create a denser cookie but offers richer flavor.
-
Different chocolates like dark chocolate, white chocolate, or mini peanut butter cups can be used as variations.
-
Store in an airtight container at room temperature for up to a week or freeze for longer storage.
