  • 10 ounces fresh spinach (about 8 cups), chopped

  • 1 tablespoon olive oil

  • 1 small onion, finely diced

  • 3 garlic cloves, minced

  • 1 teaspoon salt, divided

  • ½ teaspoon black pepper

  • 6 large eggs

  • 1 cup milk (whole or 2%)

  • 1 cup crumbled feta cheese

  • ½ cup shredded mozzarella or Monterey Jack cheese

  • ¼ teaspoon crushed red pepper flakes (optional)

  • ½ teaspoon dried oregano

  • ¼ teaspoon ground nutmeg

  • Non-stick cooking spray or olive oil for greasing


Instructions

  • Preheat the oven to 375°F (190°C). Lightly grease an 8×8 or 9×9-inch baking dish with cooking spray or olive oil.

  • Heat olive oil in a skillet over medium heat. Add the diced onion and sauté until soft and translucent, about 4–5 minutes. Stir in the minced garlic and cook for another 30 seconds.

  • Add the chopped spinach in batches, stirring as it wilts. Sprinkle with ½ teaspoon salt. Cook until all spinach is wilted and excess moisture has evaporated, about 5 minutes. Remove from heat and let it cool slightly.

  • In a large mixing bowl, whisk together eggs, milk, remaining ½ teaspoon salt, black pepper, oregano, and nutmeg until smooth.

  • Add the cooled spinach mixture to the eggs, followed by feta and mozzarella. Stir gently to combine.

  • Pour the mixture into the prepared baking dish and spread evenly. Sprinkle extra feta on top if desired.

  • Bake for 30–35 minutes or until the top is golden brown and the center is set. A toothpick inserted in the middle should come out clean.

  • Let the casserole cool for 10 minutes before slicing and serving.

Notes

For best results, drain spinach thoroughly to prevent excess moisture. You can use frozen spinach—just thaw and squeeze it well before adding. This casserole can be prepared a day ahead; refrigerate overnight and bake when ready. It’s excellent for meal prep, keeping up to 4 days in the fridge. Add extra vegetables such as mushrooms or red bell peppers for variety. Reheat leftovers in the oven or microwave for a quick, nutritious meal any time of day.
