Ingredients

  • 4 bone-in, skin-on chicken thighs (900 g / 2 lb)

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 2 tablespoons olive oil

  • 2 tablespoons unsalted butter

  • 2 shallots, sliced (60 g / 2 oz)

  • 3 garlic cloves, minced

  • 2 medium apples, sliced (300 g / 10.5 oz)

  • 1½ cups non-alcoholic apple cider (360 ml)

  • 1 cup chicken broth (240 ml)

  • 1 teaspoon Dijon mustard

  • 1 teaspoon fresh thyme leaves

  • ½ cup heavy cream (120 ml)


Instructions

  • Season chicken with salt and pepper. Sear in olive oil until golden, then remove.

  • Melt butter in the same pan. Cook shallots and garlic until fragrant.

  • Add apples, apple cider, broth, mustard, and thyme.

  • Return chicken to the pan and simmer gently until cooked through.

  • Stir in cream, simmer briefly, and serve warm.
