Description

A rich and comforting pasta dish made with garlic, heavy cream, and freshly grated Parmesan cheese. Perfect for cozy dinners and quick weeknight meals.


Ingredients

12 ounces (340 g) spaghetti
2 tablespoons (28 g) unsalted butter
1 tablespoon (15 ml) olive oil
4 cloves garlic, minced
1 ½ cups (360 ml) heavy cream
1 cup (100 g) freshly grated Parmesan cheese
½ teaspoon salt
½ teaspoon freshly ground black pepper
¼ teaspoon red pepper flakes (optional)
¼ cup (15 g) chopped fresh parsley
½ cup (120 ml) reserved pasta water (as needed)


Instructions

Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Reserve ½ cup (120 ml) pasta water, then drain.

In a large skillet over medium heat, melt the butter with olive oil. Add minced garlic and sauté for 1–2 minutes until fragrant.

Pour in the heavy cream and let it simmer for 3–5 minutes until slightly thickened. Stir in salt, black pepper, and red pepper flakes if using.

Reduce heat to low and gradually add the grated Parmesan cheese, stirring continuously until melted and smooth.

Add cooked spaghetti to the skillet and toss to coat. Use reserved pasta water as needed to reach desired sauce consistency.

Garnish with chopped parsley and serve immediately.

Notes

Use freshly grated Parmesan for the smoothest sauce. Adjust salt to taste after adding cheese. Add vegetables or grilled chicken for a heartier variation. Best enjoyed fresh, but leftovers can be reheated gently with a splash of milk or cream.
