Description

A quick and flavorful stir fry made with tender chicken, fresh zucchini, and a savory sauce. Perfect for busy weeknights when you want a healthy and satisfying homemade meal.


Ingredients

2 boneless skinless chicken breasts, sliced thin (about 1 lb / 450 g)
2 medium zucchinis, sliced into half moons (about 2 cups / 300 g)
1 tablespoon olive oil (15 ml)
1 tablespoon sesame oil (15 ml)
3 cloves garlic, minced
1 teaspoon fresh ginger, grated (5 g)
1 small onion, sliced (about 100 g)
1 red bell pepper, sliced (about 120 g)
3 tablespoons soy sauce (45 ml)
1 tablespoon oyster sauce (15 ml)
1 teaspoon cornstarch (3 g)
3 tablespoons water (45 ml)
1 teaspoon honey (5 ml)
1/2 teaspoon black pepper
1/2 teaspoon salt or to taste
1 tablespoon sesame seeds (optional)
2 green onions chopped (optional)


Instructions

Slice the chicken breast into thin strips and prepare all vegetables.

In a small bowl mix soy sauce, oyster sauce, water, honey, and cornstarch.

Heat olive oil in a large skillet over medium-high heat.

Add chicken and cook for 4–5 minutes until fully cooked. Remove and set aside.

Add sesame oil to the same pan, then cook garlic, ginger, and onion for about 1 minute.

Add bell pepper and zucchini and stir fry for 3–4 minutes.

Return the chicken to the pan.

Pour the sauce over the mixture and stir for 2–3 minutes until thickened.

Garnish with sesame seeds and green onions before serving.

Notes

For extra vegetables, add broccoli, carrots, or snap peas.
If you prefer a thicker sauce, add an additional 1/2 teaspoon cornstarch mixed with 1 tablespoon water.
Serve with steamed rice, noodles, or quinoa for a complete meal.
