Description

These roasted garlic Parmesan green beans are the perfect side dish for any occasion.   • 1 pound fresh green beans, trimmed

  • 2 tablespoons olive oil

  • 34 garlic cloves, minced

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ⅓ cup freshly grated Parmesan cheese

  • Optional: lemon zest or crushed red pepper flakes for garnish


Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

  • Rinse the green beans and trim off the ends. Pat them dry completely to ensure they roast properly.

  • In a large bowl, toss the beans with olive oil, minced garlic, salt, and pepper until evenly coated.

  • Spread the green beans in a single layer on the prepared baking sheet, making sure they aren’t overcrowded.

  • Roast for 15 minutes, stirring halfway through for even cooking.

  • Remove the baking sheet, sprinkle the beans with freshly grated Parmesan, and return to the oven. Roast for an additional 5–7 minutes until the beans are tender-crisp and the cheese is golden.

  • Transfer to a serving platter, garnish with lemon zest or red pepper flakes if desired, and serve warm.

Notes

  • For best results, use fresh green beans rather than frozen, as they roast better and develop a superior texture.

  • Make sure beans are completely dry before roasting—moisture causes steaming instead of caramelization.

  • Freshly grated Parmesan melts and crisps much better than pre-grated cheese.

  • You can easily add toasted almonds, walnuts, or fresh herbs like rosemary or parsley for extra flavor.

  • Leftovers can be stored in the fridge for up to 3 days and reheated in the oven or air fryer to restore crispness.
