Description

A warm, aromatic dish perfect for cozy evenings or festive gatherings. This medley combines tender, earthy mushrooms with sweet, mellow roasted garlic and fragrant herbs, creating a flavorful side that’s simple to prepare yet impressive to serve. Inspired by traditional European vegetable roasts, it’s a versatile dish that complements pasta, grains, or even toasted bread.

  • 2 cups cremini mushrooms, cleaned and halved

  • 2 cups white button mushrooms, cleaned and halved

  • 1 head garlic, cloves separated and peeled

  • 2 tablespoons extra-virgin olive oil

  • 1 teaspoon fresh thyme leaves, chopped

  • 1 teaspoon fresh rosemary, chopped

  • ½ teaspoon salt, or to taste

  • ¼ teaspoon freshly ground black pepper

  • 1 tablespoon balsamic vinegar (optional)

  • Fresh parsley, chopped, for garnish


Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.

  2. Lightly crush garlic cloves with the flat side of a knife to release their natural oils.

  3. In a large bowl, combine mushrooms and garlic, drizzle with olive oil, and sprinkle with thyme, rosemary, salt, and pepper. Toss gently to coat evenly.

  4. Arrange the mixture in a single layer on the baking sheet, avoiding overcrowding.

  5. Roast for 25–30 minutes, stirring halfway through, until mushrooms are tender and slightly golden, and garlic is soft.

  6. If using balsamic vinegar, drizzle over the medley after roasting and toss gently.

  7. Transfer to a serving dish and garnish with fresh parsley. Serve warm.

Notes

  • Ensure mushrooms have space on the baking sheet to roast instead of steam.

  • Fresh herbs enhance flavor; dried herbs can be substituted but may be less aromatic.

  • Roasted medley can be prepared a day ahead; store in an airtight container in the fridge and reheat gently.

  • Great as a side, pasta topping, salad addition, or spread on toasted bread.
