2 cups cremini mushrooms, cleaned and halved

2 cups white button mushrooms, cleaned and halved

1 head garlic, cloves separated and peeled

2 tablespoons extra-virgin olive oil

1 teaspoon fresh thyme leaves, chopped

1 teaspoon fresh rosemary, chopped

½ teaspoon salt, or to taste

¼ teaspoon freshly ground black pepper

1 tablespoon balsamic vinegar (optional)

Fresh parsley, chopped, for garnish
Instructions

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.

Lightly crush garlic cloves with the flat side of a knife to release their natural oils.

In a large bowl, combine mushrooms and garlic, drizzle with olive oil, and sprinkle with thyme, rosemary, salt, and pepper. Toss gently to coat evenly.

Arrange the mixture in a single layer on the baking sheet, avoiding overcrowding.

Roast for 25–30 minutes, stirring halfway through, until mushrooms are tender and slightly golden, and garlic is soft.
