Ingredients
-
12 lasagna noodles
-
2 cups cooked prime rib, thinly sliced or shredded
-
4 cups Alfredo sauce (store-bought or homemade)
-
2 cups shredded mozzarella cheese
-
1 ½ cups ricotta cheese
-
1 cup grated Parmesan cheese
-
1 teaspoon garlic powder
-
1 teaspoon onion powder
-
1 teaspoon dried Italian herbs (basil, oregano, thyme)
-
2 tablespoons olive oil
-
Salt and pepper, to taste
-
Fresh parsley, chopped (for garnish)
Instructions
-
Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with olive oil or cooking spray.
-
Bring a large pot of salted water to a boil and cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel to prevent sticking.
-
In a medium bowl, combine ricotta cheese, half of the Parmesan cheese, garlic powder, onion powder, Italian herbs, salt, and pepper. Mix until smooth.
-
Spread ½ cup of Alfredo sauce on the bottom of the prepared baking dish. Lay three lasagna noodles over the sauce. Spread a layer of the ricotta mixture over the noodles, top with ⅓ of the prime rib slices, and ⅓ of the shredded mozzarella. Drizzle with ½ cup of Alfredo sauce.
-
Repeat the layering process twice more, finishing with a layer of noodles topped with remaining Alfredo sauce, mozzarella, and Parmesan cheese.
-
Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
-
Let the lasagna rest for 10-15 minutes before slicing to allow the layers to set.
-
Garnish with freshly chopped parsley and serve warm.
Notes
-
Leftover prime rib works best, but fresh roasted prime rib or other beef cuts can be used.
-
For extra richness, make Alfredo sauce from scratch with butter, cream, and Parmesan cheese.
-
Slightly undercook noodles to prevent sogginess; they will finish cooking in the oven.
-
This lasagna can be assembled a day ahead and baked later, adding 10-15 minutes to the bake time.
-
Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
