Ingredients

1.5 pounds (700g) beef stew meat, cut into bite-sized cubes

2 tablespoons olive oil

1 large onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 yellow bell pepper, diced

1 medium carrot, sliced thinly

1 zucchini, sliced

1 can (14 oz / 400g) diced tomatoes

1 cup (240ml) beef or vegetable broth

1 teaspoon dried rosemary

1 teaspoon dried thyme
-
1 teaspoon dried oregano
-
1/2 teaspoon crushed red pepper flakes (optional)

Salt and black pepper, to taste

1/2 cup (120ml) heavy cream

1/4 cup grated Parmesan cheese

Fresh parsley, chopped, for garnish

Cooked pasta, rice, or crusty bread, for serving
Instructions

Pat the beef cubes dry and season with salt and black pepper.

Heat olive oil in a large skillet or Dutch oven over medium-high heat. Brown the beef on all sides, then remove and set aside.

In the same skillet, sauté the onion, garlic, and bell peppers for 3–4 minutes until softened. Add carrot and zucchini and cook for another 3 minutes.

Stir in the diced tomatoes, beef broth, rosemary, thyme, oregano, and crushed red pepper flakes if using. Season with additional salt and pepper.

Return the beef to the skillet and mix to coat with the sauce.

Reduce heat to low, cover, and simmer for 20–25 minutes until the beef is tender, stirring occasionally.

Remove the lid, stir in the heavy cream, and cook uncovered for 5 more minutes to slightly thicken the sauce.

Sprinkle grated Parmesan over the top and stir until melted.

Garnish with fresh parsley and serve hot over pasta, rice, or with crusty bread.
