4 slices of bread (sourdough or whole-grain recommended)

4 slices mozzarella cheese

2 slices provolone cheese

1 small tomato, thinly sliced (optional)

Instructions

Prepare the bread by spreading softened butter evenly on one side of each slice. This will help create a golden, crispy exterior when grilling.

On the non-buttered side of two bread slices, spread 1 tablespoon of pesto each. Layer mozzarella and provolone slices over the pesto, ensuring even distribution for a perfectly melty result. Add tomato slices if desired and season lightly with salt and pepper.

Place the remaining two slices of bread on top, buttered side facing out. Press gently to hold the sandwich together.
