Description

There’s something incredibly satisfying about a warm, crispy grilled cheese sandwich, and when you add the bright, herbaceous flavor of pesto, it transforms into a gourmet treat. Perfect for a cozy evening, a quick lunch, or a casual gathering, this Pesto Grilled Cheese combines melty cheese, fresh pesto, and golden, buttery bread to create a sandwich that’s both comforting and flavorful. Inspired by Italian flavors and easy-to-make comfort food, this recipe is simple enough for beginners but delicious enough to impress anyone at the table.


Ingredients

  • 4 slices of bread (sourdough or whole-grain recommended)

  • 2 tablespoons unsalted butter, softened

  • 4 tablespoons basil pesto (store-bought or homemade)

  • 4 slices mozzarella cheese

  • 2 slices provolone cheese

  • 1 small tomato, thinly sliced (optional)

  • Salt and freshly ground black pepper, to taste


Instructions

  • Prepare the bread by spreading softened butter evenly on one side of each slice. This will help create a golden, crispy exterior when grilling.

  • On the non-buttered side of two bread slices, spread 1 tablespoon of pesto each. Layer mozzarella and provolone slices over the pesto, ensuring even distribution for a perfectly melty result. Add tomato slices if desired and season lightly with salt and pepper.

  • Place the remaining two slices of bread on top, buttered side facing out. Press gently to hold the sandwich together.

  • Preheat a non-stick skillet or griddle over medium heat. Ensure it is hot enough to toast the bread evenly without burning before the cheese melts.

  • Place the sandwiches in the skillet. Cook for 3–4 minutes on each side, pressing lightly with a spatula until the bread is golden brown and the cheese is melted. If needed, cover the skillet with a lid for 1–2 minutes to help the cheese melt evenly.

  • Remove the sandwiches from the skillet and let them cool slightly before slicing. Serve warm with a side salad, baked fries, or your favorite accompaniments.

Notes

  • Leftover sandwiches are best eaten immediately, but can be stored in the refrigerator for up to 24 hours and reheated on a skillet.

  • For a vegan version, use plant-based cheese, butter alternatives, and vegan pesto.

  • Experiment with additional fillings like spinach, roasted red peppers, or caramelized onions for extra flavor and texture.

  • To achieve an extra crispy crust, brush a small amount of olive oil on the outside of the bread in addition to the butter.
