Description

These cinnamon rolls are soft, fluffy, and sweet, with a rich cinnamon swirl and creamy frosting. They’re designed for a stress-free morning: prepare them the night before, let them chill overnight, and bake fresh the next day. Perfect for weekends, brunches, or a cozy family breakfast.

Ingredients

Scale

For the Dough:

  • 1 cup warm milk

  • 2 1/4 teaspoons active dry yeast

  • 1/3 cup granulated sugar

  • 1/2 cup unsalted butter, softened

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 4 1/2 cups all-purpose flour

  • 1 teaspoon salt

For the Cinnamon Filling:

  • 3/4 cup brown sugar, packed

  • 2 tablespoons ground cinnamon

  • 1/2 cup unsalted butter, softened

For the Cream Cheese Frosting:

  • 4 ounces cream cheese, softened

  • 1/4 cup unsalted butter, softened

  • 1 cup powdered sugar

  • 1/2 teaspoon vanilla extract

Instructions

  • In a large bowl, combine warm milk and yeast. Let sit 5–10 minutes until foamy.

  • Add sugar, softened butter, eggs, vanilla, and salt. Gradually mix in flour until dough forms.

  • Knead dough for 6–8 minutes until smooth and elastic.

  • Place dough in a greased bowl, cover, and let rise 1 hour until doubled.

  • Mix brown sugar and cinnamon for the filling. Keep butter ready to spread.

  • Roll dough into a large rectangle. Spread butter over dough, then sprinkle with cinnamon sugar.

  • Roll dough into a log from the long side and slice into 12–15 rolls.

  • Arrange rolls in a greased 9×13-inch dish. Cover and refrigerate overnight.

  • In the morning, let rolls sit at room temperature 45–60 minutes. Preheat oven to 350°F (175°C) and bake 22–28 minutes until lightly golden.

  • For frosting, combine cream cheese, butter, powdered sugar, and vanilla until smooth. Spread on warm rolls.

Notes

  • Use fresh yeast for best results.

  • Keep dough soft; avoid adding too much flour.

  • Frost while rolls are warm for a gooey finish.

  • Rolls can be stored in an airtight container at room temperature up to 2 days or refrigerated up to 5 days.

  • Freezing option: Freeze slices before baking and thaw overnight in the fridge before baking.
