Ingredients

  • 3 medium zucchini (about 1 ½ pounds / 680 g), sliced

  • 1 cup (100 g) finely grated Parmesan cheese

  • ¾ cup (45 g) breadcrumbs

  • 1 teaspoon garlic powder

  • ½ teaspoon onion powder

  • 1 teaspoon dried Italian herbs

  • ¾ teaspoon salt

  • ½ teaspoon black pepper

  • 2 large eggs

  • 1 tablespoon (15 ml) olive oil or olive oil spray


Instructions

  • Preheat oven to 425°F (220°C) and prepare a baking sheet with parchment paper.

  • Wash and dry zucchini, then slice evenly.

  • Beat eggs in a shallow bowl.

  • Combine Parmesan cheese, breadcrumbs, garlic powder, onion powder, herbs, salt, and pepper in another bowl.

  • Dip zucchini into egg, then coat with Parmesan mixture.

  • Arrange in a single layer on the baking sheet.

  • Bake for 20–25 minutes, flipping halfway, until golden and crispy.
