Ingredients

3 medium zucchini (about 1 ½ pounds / 680 g), sliced

1 cup (100 g) finely grated Parmesan cheese

¾ cup (45 g) breadcrumbs

1 teaspoon garlic powder

½ teaspoon onion powder

1 teaspoon dried Italian herbs

¾ teaspoon salt

½ teaspoon black pepper

2 large eggs

1 tablespoon (15 ml) olive oil or olive oil spray
Instructions

Preheat oven to 425°F (220°C) and prepare a baking sheet with parchment paper.

Wash and dry zucchini, then slice evenly.

Beat eggs in a shallow bowl.

Combine Parmesan cheese, breadcrumbs, garlic powder, onion powder, herbs, salt, and pepper in another bowl.

Dip zucchini into egg, then coat with Parmesan mixture.

Arrange in a single layer on the baking sheet.
