For the Turkey Patties

1 ½ pounds ground turkey

1 small onion, finely chopped

½ cup breadcrumbs (plain or seasoned)

For the Sage Gravy

3 tablespoons butter

3 tablespoons all-purpose flour

3 cups chicken or turkey broth

1 teaspoon dried sage (or 2 teaspoons fresh, finely chopped)

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and black pepper, to taste

Optional: ¼ cup heavy cream for added richness

Prepare the turkey patties by combining ground turkey, onion, garlic, breadcrumbs, egg, parsley, sage, paprika, salt, and pepper in a large bowl. Mix gently until evenly combined. Shape into 6–8 patties about ½ to ¾ inch thick and place on a parchment-lined baking sheet.

Brush the tops of the patties with olive oil to encourage browning and help keep them moist.

Bake the patties in a preheated oven at 375°F (190°C) for 25–30 minutes, or until the internal temperature reaches 165°F (74°C). For a golden finish, broil for 2–3 minutes at the end.

While the patties bake, prepare the gravy. Melt butter in a medium saucepan, then whisk in flour to make a roux. Cook for 1–2 minutes, whisking constantly. Slowly add broth while whisking to avoid lumps. Stir in sage, garlic powder, onion powder, salt, and pepper. Simmer for 5–7 minutes until thickened. For extra richness, stir in heavy cream.

Remove the patties from the oven, let rest for 2–3 minutes, then transfer to a serving dish. Spoon sage gravy generously over the patties and serve immediately with your favorite sides.
