Ingredients

2 large sweet potatoes (about 900 g / 2 lb), sliced into 1.5 cm (½-inch) rounds

3 tablespoons olive oil

1 teaspoon sea salt

½ teaspoon ground black pepper

½ teaspoon paprika

¼ teaspoon garlic powder

80 g (¾ cup) crumbled feta cheese

3 tablespoons honey

1 tablespoon fresh thyme or parsley (optional)
Instructions

Preheat the oven to 220°C (425°F) and line a baking sheet with parchment paper.

Toss the sweet potato rounds with olive oil, salt, pepper, paprika, and garlic powder.

Arrange in a single layer on the baking sheet and roast for 20 minutes.

Flip the rounds and roast for another 15–20 minutes until golden and tender.

Drizzle with honey, sprinkle with feta, and garnish with herbs if desired. Serve warm.
Notes
For best results, slice the sweet potatoes evenly to ensure uniform roasting. Add honey and feta just before serving for optimal flavor and texture.
