A comforting yet elevated grilled cheese featuring sweet pears, crisp apples, and deeply caramelized onions melted together with gooey cheese.
Ingredients

2 tablespoons olive oil

2 large yellow onions, thinly sliced (about 500 g / 1.1 lb)

½ teaspoon salt

¼ teaspoon ground black pepper

8 slices artisan bread

2 medium ripe pears, thinly sliced (about 300 g / 10.5 oz)

1 large apple, thinly sliced (about 200 g / 7 oz)

2 cups shredded cheese (about 200 g / 7 oz)

4 tablespoons unsalted butter, softened
Instructions

Heat olive oil in a skillet over medium-low heat. Add onions and salt, cooking for 25–30 minutes until golden and caramelized. Stir occasionally.

Season onions with black pepper and set aside.

Butter one side of each bread slice. Place four slices butter-side down.

Add cheese, pear slices, apple slices, and caramelized onions. Top with more cheese.

Close sandwiches with remaining bread, butter-side up.

Cook in a skillet over medium heat for 3–4 minutes per side until golden and melted.

Rest briefly, slice, and serve warm.

Slice fruit thinly for even cooking and better texture.

Caramelized onions can be prepared ahead and refrigerated.
