Description

A creamy, comforting holiday side dish made with fresh green beans, a homemade mushroom sauce, cheddar cheese, and a crispy onion topping. Perfect for festive gatherings or cozy family dinners.

1 ½ pounds fresh green beans, trimmed and cut into 2-inch pieces
2 tablespoons unsalted butter
1 small yellow onion, finely diced (about 1 cup)
2 cloves garlic, minced
8 ounces fresh mushrooms, sliced (about 2 ½ cups)
3 tablespoons all-purpose flour
1 ½ cups whole milk
½ cup heavy cream
¾ teaspoon salt
½ teaspoon black pepper
½ teaspoon onion powder
½ teaspoon garlic powder
1 cup shredded sharp cheddar cheese
1 ½ cups crispy fried onions, divided


Instructions

Bring a large pot of salted water to a boil. Add green beans and cook for 4–5 minutes. Transfer to ice water, then drain and set aside.

In a skillet, melt butter over medium heat. Add onion and cook 3–4 minutes. Stir in garlic and cook 30 seconds.

Add mushrooms and sauté 6–8 minutes until softened and lightly browned.

Stir in flour and cook 1–2 minutes. Gradually whisk in milk and heavy cream. Simmer 4–5 minutes until thickened.

Add salt, pepper, onion powder, garlic powder, and shredded cheddar cheese. Stir until smooth.

Preheat oven to 350°F (175°C). Combine green beans, sauce, and 1 cup crispy fried onions in a bowl. Transfer to a 9×13-inch baking dish.

Bake uncovered for 20 minutes. Top with remaining ½ cup crispy fried onions and bake 5–10 minutes more until golden and bubbly.

Let rest 5 minutes before serving.
