Ingredients

2 pounds beef stew meat or chuck roast, cut into 1½-inch cubes

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon paprika

1 teaspoon onion powder

1 tablespoon olive oil

6 tablespoons unsalted butter

6 cloves garlic, minced

1 cup beef broth

1 tablespoon soy sauce

1 teaspoon dried thyme

1 teaspoon dried parsley

1 tablespoon cornstarch

2 tablespoons water
Instructions

Season the beef with salt, black pepper, paprika, and onion powder.

Heat olive oil in a skillet and sear the beef on all sides until browned.

Transfer the beef to the slow cooker.

Melt butter in the same skillet, add garlic, and cook briefly until fragrant.

Stir in beef broth and soy sauce, then pour over the beef.

Sprinkle with thyme and parsley.

Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.

Mix cornstarch and water, stir into the slow cooker, and cook for 30 more minutes until thickened.
Notes
Serve over mashed potatoes, rice, or noodles. Store leftovers in the refrigerator for up to three days and reheat gently for best results.
