Description

Ingredients

  • 1 whole chicken (1.82 kg / 44.5 lb)

  • 4 tablespoons olive oil

  • 3 tablespoons fresh lime juice

  • 4 garlic cloves, minced

  • 2 teaspoons ground cumin

  • 2 teaspoons smoked paprika

  • 1 teaspoon ground coriander

  • 1 teaspoon dried oregano

  • 1 teaspoon chili powder

  • 1 ½ teaspoons salt

  • 1 teaspoon ground black pepper


Instructions

  • In a bowl, mix olive oil, lime juice, garlic, spices, salt, and pepper.

  • Rub the marinade all over the chicken, including under the skin.

  • Refrigerate for at least 8 hours or overnight.

  • Preheat oven to 200°C (400°F).

  • Roast the chicken for 60–70 minutes until fully cooked.

  • Rest for 10 minutes before carving and serving.

Notes

For best flavor, marinate the chicken overnight. Serve with roasted potatoes, rice, or a fresh salad for a complete meal.
