Ingredients

1 whole chicken (1.8–2 kg / 4–4.5 lb)

4 tablespoons olive oil

3 tablespoons fresh lime juice

4 garlic cloves, minced

2 teaspoons ground cumin

2 teaspoons smoked paprika

1 teaspoon ground coriander

1 teaspoon dried oregano

1 teaspoon chili powder

1 ½ teaspoons salt

1 teaspoon ground black pepper
Instructions

In a bowl, mix olive oil, lime juice, garlic, spices, salt, and pepper.

Rub the marinade all over the chicken, including under the skin.

Refrigerate for at least 8 hours or overnight.

Preheat oven to 200°C (400°F).

Roast the chicken for 60–70 minutes until fully cooked.

Rest for 10 minutes before carving and serving.
Notes
