Description

Mini Pecan Pie Bites are the ultimate little indulgence when you want all the cozy flavor of classic pecan pie in a bite-sized form. They’re perfect for Thanksgiving gatherings, holiday cookie trays, potlucks, or simply as a sweet treat with your afternoon coffee. These miniature desserts bring all the nostalgia of traditional pecan pie in a fun, shareable version.

  • 1 package refrigerated pie crusts (or homemade if you prefer)
  • 1 cup finely chopped pecans
  • ¾ cup brown sugar, packed
  • ½ cup corn syrup
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a mini muffin pan with nonstick spray or butter to ensure the bites release easily after baking.
  2. Unroll your pie crusts and, using a round cutter (about 2 ½ inches in diameter), cut circles from the dough. Gently press each circle into the wells of the prepared mini muffin pan, shaping them to form little cups.
  3. In a mixing bowl, whisk together the brown sugar, corn syrup, eggs, melted butter, vanilla extract, and pinch of salt until smooth. Stir in the chopped pecans, ensuring they’re evenly distributed in the filling mixture.
  4. Spoon the pecan filling into each prepared crust cup, filling about three-quarters full to allow room for expansion. Place the muffin pan in the oven and bake for 20–25 minutes, or until the filling is set and the crust is golden brown.
  5. Remove the pan from the oven and let the bites cool in the pan for 10 minutes before transferring them to a wire rack. Once fully cooled, serve immediately or store in an airtight container.

Notes

  • You can double the recipe if you’re serving a crowd.
  • To make removing the bites easier, try using parchment paper circles at the bottom of the muffin tins.
  • These bites taste even better the next day after the flavors have had time to meld.
  • For presentation, dust lightly with powdered sugar before serving.
