A warm, sweet, and nutty side dish that transforms simple carrots into a show-stopping addition to any meal. Perfect for holiday gatherings, cozy family dinners, or a special weeknight treat, these glazed carrots combine tender vegetables, rich maple syrup, and crunchy toasted pecans for a flavor everyone will love. This recipe brings a touch of elegance to your plate while remaining easy enough to prepare anytime.

Ingredients

Scale
  • 1 ½ pounds fresh carrots, peeled and cut into sticks or coins

  • 3 tablespoons unsalted butter

  • ¼ cup pure maple syrup

  • 2 tablespoons brown sugar, packed

  • 1 teaspoon vanilla extract

  • ½ teaspoon salt

  • ¼ teaspoon ground cinnamon

  • ¼ teaspoon freshly ground black pepper

  • ½ cup pecans, toasted and roughly chopped

  • Fresh parsley, chopped, for garnish (optional)

Instructions

  • Prepare the Carrots: Begin by peeling and cutting the carrots into uniform sticks or coins to ensure even cooking. Rinse under cold water and pat dry.

  • Toast the Pecans: Heat a dry skillet over medium heat. Add the pecans and toast for 3–5 minutes, stirring frequently until lightly browned and fragrant. Remove from heat and set aside.

  • Cook the Carrots: Melt the butter in a large skillet over medium heat. Add the carrots and stir to coat evenly. Cook for about 5 minutes until they begin to soften.

  • Add the Glaze: Reduce heat to medium-low. Add maple syrup, brown sugar, vanilla extract, salt, cinnamon, and black pepper. Stir to coat the carrots. Cook for 10–12 minutes, stirring occasionally, until carrots are tender and glaze is thickened.

  • Finish with Pecans: Sprinkle toasted pecans over the glazed carrots. Stir gently to combine, ensuring each carrot has a touch of crunch.

  • Serve and Garnish: Transfer carrots to a serving dish. Garnish with chopped parsley if desired. Serve warm.

Notes

  • Use fresh, firm carrots for the best flavor and texture.

  • Toasting pecans enhances their flavor and crunch.

  • Adjust sweetness by modifying the maple syrup or brown sugar.

  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.

  • Reheat gently on the stovetop or in the microwave, adding a splash of water or butter if glaze thickens.
